  • 2 packages (16 oz) Vanilla
    CANDIQUIK® Coating
  • 24 Large Marshmallows
  • 1 package Flake Coconut
  • 1 package Round Shortbread Cookies or
    Round Crackers
  • Pretzel Sticks and/or Pretzel Twists
  • Oil-Based Green, Red & Yellow Food Colorings
  • Decorative Icings

  1. Place coconut and a few drops of red and yellow food coloring in a plastic zip-lock bag. Shake until all coconut is colored dark red. (The yellow food coloring helps turn the coconut red instead of pink.)
  2. Melt one package of CANDIQUIK® Coating in Melt and Make Microwaveable Tray™ according to directions on package. Add a few drops of green oil-based food coloring.
  3. Dip 12 marshmallows and cookies (or crackers) into green melted CANDIQUIK® Coating; place on wax paper to dry. Once dry, dab a small amount of green CANDIQUIK® Coating onto marshmallow and place on top of cookie (or cracker). Use decorative icing to create a buckle and hat band. Set hat aside.
  4. Melt other package of CANDIQUIK® Coating in Melt and Make Microwaveable Tray™ according to directions on package.
  5. Insert pretzel sticks into remaining 12 marshmallows and dip in white melted CANDIQUIK® Coating; shake off excess coating. Sprinkle red coconut onto marshmallow, leaving a space open for the face. Set on wax paper to dry.
  6. Attach hat to leprechaun head with a small dab of melted CANDIQUIK® Coating.
  7. Create faces with decorative icings.

Optional: To create leprechauns with bodies and feet, you will need 12 additional marshmallows. Dip marshmallows in green melted CANDIQUIK® Coating. When dry, attach to a small pretzel twist with a dab of melted CANDIQUIK® Coating. Attach head with hat to green marshmallow body.
